Standardization of traditional food and technology

The proposed project is envisioned for the development of nutraceuticals through the processing of locally available agricultural raw materials; especially mushrooms in Gandaki Province. The different standardized traditional food items of mushroom; Gundruk, Sukuti, Churna, Achaar, will be formulated and undergo robust laboratory testing which will promote traditional food processing practices in Nepal.
